The Place of Kuru Fasulye in Turkish Cuisine

Especially in the winter months, consumption increases. Thanks to its high protein and fiber content, Kuru Fasulye provides a long-lasting feeling of fullness.
Regional Variations
In some regions, it is prepared with pastırma or sucuk, while in other households a simple and lighter version is preferred. This flexibility makes Kuru Fasulye suitable for every taste.

The secret to a flavorful Kuru Fasulye lies in the right choice of ingredients.

1 tablespoon butter (optional)

How Do You Make Kuru Fasulye?
Preparing a delicious Kuru Fasulye at home is easier than you think. With the right techniques, you achieve the perfect texture and flavor.
1. Soaking and Pre-cooking the Beans
Soak the beans overnight in plenty of water. This ensures they cook faster and are easier to digest. Drain them the next day and cook them for about 30 to 40 minutes beforehand. This step helps to achieve a soft texture.
2. Preparing the Sauce
Heat the olive oil and butter in a large pan. Sauté the onion until it is lightly golden brown.
If you are making a version with meat, add the beef now and fry it until it has released and reabsorbed its juices. Then add the tomato and pepper puree and fry until the raw smell is gone.
3. Combining and Cooking
Add the pre-cooked beans to the pan. Pour in the hot water and spices. Cover the pan with a lid and let it simmer gently on low heat for about 40 to 50 minutes.
Kuru Fasulye should have a slightly juicy but full, aromatic texture. If necessary, you can add some hot water during cooking.
