What is Biber Dolması

Biber Dolması literally means stuffed pepper. In this traditional dish, green peppers are filled with an aromatic mixture of rice, onion, tomato, and spices.

There are two popular versions of the Biber Dolması recipe:

Biber Dolması with olive oil

This version is lighter in flavor and is usually served cold or lukewarm. It is a favorite during summer and pairs perfectly with a fresh salad or yogurt.

Biber Dolması with minced meat

The meat version is fuller and richer in taste. It is served warm as a main course and is especially popular at family dinners.

At Yasemin, we prepare the Biber Dolması recipe using traditional methods to preserve the authentic flavor of Turkish cuisine.

Ingredients for the Biber Dolması Recipe

For four people you need:

8 to 10 medium-sized green peppers
1.5 glasses of rice such as Baldo or Osmancık
2 finely chopped onions
2 grated tomatoes
½ glass of olive oil
1 tablespoon tomato paste
2 tablespoons raisins (optional)
Fresh mint, finely chopped
Fresh parsley, finely chopped
Salt, black pepper, and allspice to taste
2 glasses of water

For the meat version, add 200 to 250 grams of ground beef to the filling.

How to Make the Perfect Biber Dolması Recipe

Preparing the Peppers

Cut off the top part of the peppers and remove the seeds. Rinse them carefully and let them drain. Choose firm peppers with thin skins so they keep their shape during cooking.

Preparing the Filling

Heat the olive oil in a pan and sauté the onion until translucent. Add the washed rice and briefly fry it. Then mix in the tomatoes, tomato paste, herbs, mint, and parsley.

Add half a glass of water and let the mixture simmer gently until the liquid is absorbed. The rice does not need to be fully cooked yet.

Filling and Cooking the Peppers

Fill the peppers with the rice mixture, leaving some space at the top. Place them upright in a pan and cover with the cut-off tops.

Add one and a half glasses of water and a splash of olive oil. Let the Biber Dolması recipe simmer gently for 30 to 40 minutes with the lid on the pan.
